Animal and vegetable fats and oils - Determination of alkalinity (ISO 10539:2002)

Overview

EN ISO 10539:2002 sets out a standardized method for the determination of alkalinity in animal and vegetable fats and oils. Developed by the European Committee for Standardization (CEN) in collaboration with ISO, this standard ensures consistency and accuracy in measuring alkaline content. It is a critical reference for laboratories, food producers, and quality assurance teams working with edible fats and oils.

The method applies to most animal and vegetable fats and oils, with exceptions for dry melted animal fats and high-acidity samples. By defining precise analytical procedures, this standard promotes reliable test results-essential for quality control, product labeling, and regulatory compliance in the fats and oils industry.

Key Topics

  • Scope and Applicability

    • Covers the determination of alkalinity in animal and vegetable fats and oils using titration with hydrochloric acid.
    • Not applicable to dry melted animal fats or to samples with more than 60% acidity, as per ISO 660.
  • Test Principle

    • A sample is dissolved in warm aqueous acetone and titrated with a standard hydrochloric acid solution.
    • The endpoint is determined by a color change, indicating the neutralization of alkaline constituents.
  • Sample Preparation

    • Follows guidance in ISO 661 for preparing test samples to ensure consistency.
  • Expression of Results

    • Alkalinity is reported as milligrams of sodium oleate per kilogram of sample, or as a percentage of sodium hydroxide.
  • Precision and Reliability

    • Details on repeatability and reproducibility are included, based on international interlaboratory studies.
  • Reporting Requirements

    • Specifies documentation and report elements needed to ensure traceability and comparability of results.

Applications

EN ISO 10539:2002 is relevant for a wide range of practical applications, notably:

  • Quality Control in Food Production

    • Assists manufacturers of edible oils, margarine, and processed foods in verifying that products meet chemical specifications for alkalinity.
    • Facilitates detection of processing residues or accidental contamination by alkaline substances.
  • Regulatory Compliance

    • Supports compliance with local and international regulations concerning the quality and safety of animal and vegetable oils.
  • Laboratory Analysis

    • Provides a standardized approach for laboratories performing routine analysis of fats and oils, ensuring accuracy and comparability of results across different facilities.
  • Research and Product Development

    • Useful in product formulation and process optimization to manage the alkaline content of ingredients.

Related Standards

For comprehensive analysis and quality control of fats and oils, users should consult the following related standards:

  • ISO 660 - Determination of acid value and acidity in animal and vegetable fats and oils
  • ISO 661 - Preparation of test samples for fats and oils analysis
  • ISO 3696 - Specifications and test methods for water used in laboratory analysis
  • ISO 5555 - Sampling procedures for animal and vegetable fats and oils
  • ISO 5725 - Guidelines on accuracy (trueness and precision) of measurement methods and results

These standards, in conjunction with EN ISO 10539:2002, provide a robust framework for the analytical assessment and quality assurance of animal and vegetable fats and oils. Adherence to these methodologies helps ensure product safety, regulatory conformity, and consumer trust in food products.

ISO 10539:2002(E) © ISO 2002 – All rights reserved iii Foreword ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies (ISO member bodies). The work of preparing International Standards is normally carried out through ISO technical committees. Each member body interested in a subject for which a technical committee has been established has the right to be represented on that committee. International organizations, governmental and non-governmental, in liaison with ISO, also take part in the work. ISO collaborates closely with the International Electrotechnical Commission (IEC) on all matters of electrotechnical standardization. International Standards are drafted in accordance with the rules given in the ISO/IEC Directives, Part 3. The main task of technical committees is to prepare International Standards. Draft International Standards adopted by the technical committees are circulated to the member bodies for voting. Publication as an International Standard requires approval by at least 75 % of the member bodies casting a vote. Attention is drawn to the possibility that some of the elements of this International Standard may be the subject of patent rights. ISO shall not be held responsible for identifying any or all such patent rights. ISO 10539 was prepared by Technical Committee ISO/TC 34, Food products, Subcommittee SC 11, Animal and vegetable fats and oils. Annex A of this International Standard is for information only.
